Cooking Instructions: (Recommended for Food Safety and Quality): Product needs to be thoroughly cooked according to the cooking instructions below. Dry beans must be soaked before cooking. Beans are an agriculture product. Despite the use of modern cleaning equipment, it is not always possible to remove all foreign materials. Sort, remove foreign materials and rinse beans before cooking. Quick Soak: 1. Sort and rinse beans; boil 6-8 cups of water. 2. Add 1 lb (2-1/2 cups) of beans, bring to boil and then boil for 2 minutes. 3. Remove from heat, cover with lid and let stand for 1 hour. 4. Drain soak water and rinse beans. Overnight Soak: 1. Sort rinse beans. 2. To 1 lb (2-1/2 cups) of beans, add 6-8 cups of water. 3. Let stand overnight or at least 6-8 hours. 4. Drain soak water and rinse beans. Cooking Instructions: 1. Bring 6-8 cups of water to boil. 2. Add drained and rinsed beans to the boiling water and reduce heat to simmer. 3. Simmer gently with tilted cover until desired tenderness is reached, about 1 to 1-1/2 hours. 4. Add salt and pepper to taste. Acidic ingredients, such as tomatoes, vinegar, wine or citrus juices should only be added at the end of cooking once beans are tender. Difference in altitude, hardness of water and product moisture may change the suggested cook time.
