Directions

Cooking Instructions: Quick Soak: 1. Place washed and sorted beans in a large (6 qts) pot and add 2-1/2 qts of water. 2. Bring water to a rapid boil. Boil for 2 minutes. Remove from heat and allow to soak, covered, for 1 hour. 3. Drain water and rinse beans. Overnight Soak: 1. Place washed and sorted beans in a large (6 qts) pot and add 2-1/2 qts of water. 2. Beans may be soaked, covered in cold water overnight. However, starting with a 2 minute boil will help soften skins and prevent souring if room is warm. 3. Discard water and rinse. 4. Cook beans to desired tenderness about 2 hours. Cooking Instructions: 1. Bring 2-1/2 qts of water to a boil. 2. Add drained and rinsed beans, return to a boil, and then reduce heat to simmer, cook uncovered, until tender, approximately 1-1/2 to 2 hours. Difference in altitude, hardness of water and product moisture may change the suggested cook time.
